Introduction

I needed this to have low calories and high nutrition. I needed this to have low calories and high nutrition.
Number of Servings: 2

Ingredients

    Cooked butternut squash
    1 can broth (veggie)
    1/2 onion
    salt & pepper
    red pepper
    ground ginger
    4 oz greek yogurt

Tips

I used the squash I had in the freezer cooked off at the end of the garden season. I used part of the broth the night before to make hummus.


Directions

In sauce pan I put onion the chopped onion and started to cook off. Add broth, and squash and season till it is hot. Put in food processor till creamed. Add yogurt and enjoy. I topped with cheese. Add more broth to make thinner soup. This made enough for 2 big bowls of thick soup.
