Ingredients

    2 tbsp olive oil
    1 large onion, thinly sliced
    5 tsp curry powder
    1/4 tsp cayenne pepper
    3 14-oz cans vegetable broth (or water)
    1 large bunch or 2 small bunches swiss chard, tough stalks trimmed, coarsely chopped (about 12 cups)
    1 pound red lentils (about 2.25 cups)
    1 15-16 oz can garbanzo beans, drained
    yogurt

Tips

Look for a variety of Swiss chard known as Bright Lights, whose stalks and veins can be electric shades of orange, yellow, or even hot pink. This variety is delicious, it's flavor is a bit milder than red and green chard and will add a fun touch to this gold and green stew.


Directions

Heat oil in heavy saucepan over medium-high heat. Add onion; saute until golden, about 13 minutes. Mix in curry powder and cayenne. Add broth and chard. Increase heat; bring to boil. Add lentils and garbanzo beans; reduce heat to medium. Cover; simmer until lentils are tender, stirring twice, about 10 minutes. Ladle stew into bowls. Top with yogurt.
