Ingredients

    1 cup chapped onions
    2 tablespoons vegetable oil
    2 medium potatioes, thinly sliced
    1 medium carrot, thinly sliced
    1 medium yellow summer squash, thinkly sliced
    1/2 teaspoon ground black pepper (or to taste)
    pinch of turmeric
    2 cups vegetable stock or water
    1 cup unsweetened vanilla almond milk (original recipe calls for either buttermilk or milk)
    1 cup shredded sharp cheddar cheese
    salt to taste

    minced fresh scallions, chives or parsley to garnich (optional)


Tips

The original recipe calls for either buttermilk or milk, but I prefer to use almond milk. Using vegetable stock added more flavor then just using water.


Directions

1. Saute the onions the vegetable oil for about 5 minutes or until they begin to soften.
2. Stir in the potatioes, carrots, squash, black pepper, and turmeric, and stir.
3. Stir in the milk, and cheese.
4. Puree the soup in a blender or food processor.
5. Gently reheat, and add salt and pepper.
6. Top with scallions, chives, or parsley.

Serving Size: makes 4-6 8 oz servings
