Ingredients

    1.25lbs extra lean ground beef
    3/4 cup chopped onion
    1/2 cup chopped green pepper
    1/4 cup chopped red pepper
    1/4 cup chopped yellow or orange pepper
    15oz can beef broth - fat free & low sodium
    1T chili powder
    1.5t cumin
    3/4t oregano
    1/2t salt
    1/2t pepper
    1T minced garlic
    2 - 14oz cans diced tomatoes
    2 - 15oz cans black beans, drained
    2% shredded cheddar cheese as topping (amt varies)

Directions

In a dutch oven, cook ground beef, onion and bell pepper til browned and crumbly. Drain well. Add broth, chili powder, cumin, oregano, salt, pepper, minced garlic, diced tomatoes and drained black beans. Simmer for 30 minutes, or until thick. Top servings with shredded cheddar cheese.
