Ingredients

    1 Cup All Purpose Flour
    2 Tsp Baking Powder
    1/2 Tsp Sea Salt
    1/3 Cup Turbinado Sugar
    4 Tbsp. Butter (1/2 stick)
    1/2 Cup canned Coconut Milk
    1/3 Cup Macadamia Nuts, chopped
    1/3 Cup Dried Strawberries, chopped

Tips

I've tried this by replacing the coconut milk with regular milk, but it definitely doesn't taste as good/rich. I've tried substituting other dried fruits, but I always return to the strawberries!


Directions

In a medium-sized mixing bowl mix or sift the flour, baking powder, salt and sugar. Cut in the butter until you've achieved fine crumbs. Stir in the coconut milk until it's all well-blended. Add the nuts and berries. The dough will be wet and sticky. Roll it (or pat with your hands) out on a well-floured surface til it is approx 3/4' thick and 10" in diameter. Using a pizza cutter, cut it into 8 triangular pieces. Transfer them to a 10-12" cast iron skillet. Cook for @ 30 minutes or until golden brown. Remove from skillet and transfer to cooling rack.
