Introduction

Great for lunch, dinner or side dish! Great for lunch, dinner or side dish!
Number of Servings: 4

Ingredients

    diced tomatoes (14.5 oz)
    cannellini beans (15 oz)
    1/2 cup of lentils
    parmesan cheese (tbsp)
    olive oil (1 tbsp)
    1 small onion (cut julian style or thick wedges)
    4 garlice cloves

Directions

Boil lentils for 20 minutes until soft

In another pot saute garlic, onion and olive oil until they are soft then add tomatoes, beans, parmesan cheese. Let this boil on low-med.

When lentils are finished drain them and add them to the mixture.

Add salt and pepper and parsley to taste.
