Introduction

Suitable for Dukkan diet. Very versatile - can be pre-prepared and eaten for breakfast, or warm or cold as a dessert.

This is based on a recipe I originally found on the internet somewhere but I've cooked it many times now and its undergone a few changes.

Number of Servings: 6

Ingredients

    600g to 650g of f/f cottage cheese
    6 medium eggs
    quarter cup spenda

    Flavourings - any ONE of the following:
    1. Rice pudding flavour: 2 teaspoons vanilla essence
    2. Baked Lemon cheesecake flavour: Grated zest of two lemons
    3. Chocolate cheesecake flavour: 6 teaspoons of sugar free chocolate powder/cocoa
    4. Mocha flavour: 4 teaspoons of sugar free chocolate powder and 2 teaspoons decaff coffee powder

Tips

Top with a few flaked almonds, stewed rhubarb or f/f vanilla yoghurt - we mainly eat it just as it is.

Nutrition information is based on the Rice Pudding variation.


Directions

Preheat oven to 160c / 320f / gas mark 3 and line a flan or baking tin.

Crack eggs in to a large bowl and beat until creamy. Add remaining ingredients and stir carefully until well combined. Spoon in to the flan or baking tin and bake in the centre of the oven for 40 to 45 minutes. Keep checking to make sure its not browning too quickly if it does seem to be then cover with foil.

Can be served warm or cold.

    Incredible!
    I made this last night using 1/6th of the recipe with Cottage cheese processed in food processor, poured in 3 ramekin cups, & then refrigerated. Then this morning I made this with american cheese and chopped ham on top in the microwave. TY again. Delicious. - 12/5/14
