Ingredients

    Hogdson Mill Bran Muffin Mix
    1 mini box of raisins
    1/2 cup of Go Lean Crunch
    1/2 cup of Low fat Vanilla West Soymilk
    1 egg
    2 tsp Splenda (or 2 packets)

Tips

These muffins are naturally moist. To preserve that be sure to put in a container that will retain moisture, but then do not leave out in hot or humid conditions. Muffins are very fresh and will mold. :( If you keep them in the refrigerator they just need a quick microwave is you wish them to be warm. Enjoy!


Directions

Mix together the dry ingredients and take care to break up the clusters of the go lean crunch. You may either: 1) add raisins directly, or 2) plum raisins first by placing in boiling hot water for 5 minutes and draining off the water well. Then add all liquid ingredients and mix well and until well moistened. Be sure to check the bottom of the bowl for dry mix that may have been missed in the stirring. Spoon into muffin cups and bake for 15 - 20 min. May wish to test one with toothpick in center to make sure this dense mixture is done.
