Ingredients

    Melt 1 TBS coconut oil in a sauce pan
    add 6 TBS (1/2 cup) Flax Meal
    add 1 large egg
    add 1 pinch sea salt
    stevia
    lemon rind from one lemon
    1/2 tsp vanilla
    water

    Mix all together to form a moist dough and then press in the bottom of a spring form pan. Bake at 400* until done (or about 10 minutes) Set out to cool.
    Turn the oven to 350*

    In your blender, mix
    4 cups fat free cottage cheese;
    1 pint 100% egg whites;
    lemon rind; stevia;
    4 tbs coconut flour;
    vanilla; and
    sea salt
    until very smooth and fluffy

    Pour into spring form pan and then bake 30 to 40 minutes or until a knife inserted in the center comes out clean.
    Let cool on a baking rack.



    Top with sugar free jam or sugar free chocolate topping for an extra treat.
