Ingredients

    1 - 3lb. bag red salad potatoes
    2 med onions, chopped
    1-1/2 C chopped dill pickles
    10 hard boiled eggs
    2-1/2 C mayonnaise
    1/4 C mustard

Directions

Boil potatoes in skin until centers are not hard, about 45 minutes. While potatoes are cooking chop onions, and pickles. Bring a pan of water to a boil, remove from heat, put in eggs, and cover for 10 minutes for perfect hard boiled eggs. Run cold water over eggs, remove shells and let eggs cool. When potatoes are done pour off hot water and add cold water to stop cooking and start cooling potatpes a little. Pour water of and let potatoes dry and cool. Remove skin, and cut potatoes into chunks in a large bowl, or leave skin on if you prefer. Chop eggs and add along with onions, pickles, mayonnaise and mustard. Salt and pepper to taste. Stir together gently and serve immediately, or chill in refrigerator if you like it cold.
