Ingredients

1 tablespoon of unsalted butter
2 cloves of garlic, minced
1 cup of sliced white mushrooms
1 teaspoon fresh ground black pepper
pinch of nutmeg
1 large yellow bell pepper, medium dice
1 - 10 ounce package of baby spinach, washed
Directions
1. In a large nonstick pan, heat the butter on medium high until it foams. Add the garlic and cook for 30 seconds.
2. Add the mushrooms and coat with the butter and garlic. Add the pepper and nutmeg and cook the mushrooms until they have released most of their moisture, about 4 minutes.
3. Add the peppers and cook until tender about 3 minutes.
4. Add the spinach and cook until wilted, about 5-6 minutes. Serve hot.
