Introduction

Number of Servings: 8

Ingredients

    2 cans diced tomatoes (14.5 oz each) You can use low or no sodium tomatoes.
    1 Cup chopped onion
    1/2 Cup chopped green bell pepper
    2 cloves minced garlic (to equal 2 tblsp)
    1 Tblsp cilantro
    1 Tblsp dried oregano leaves
    1 tsp cumin
    1/2 tsp ground sea salt
    1/4 tsp ground black pepper
    1/4 tsp crushed red pepper flakes
    16 oz leftover turkey (I freeze mine in 16 oz packages)

    0.5 Cup shredded Mexican blend cheese - divided
    1/2 Cup reduced fat sour cream - divided

Directions

Combine all ingredients, except turkey, in slow cooker. Place the frozen turkey on top, cover and cook for 4 hours on low.

If using fresh turkey breast then cook 8 hours on low and break up/shred the turkey before serving.

Serve in bowls and top with shredded cheese and low fat sour cream.

Can also serve with Tortilla chips - don't forget to add the nutritional info if you do!

    Very Good
    I only had 3/4 pound of turkey, so I added a can of kidney beans to bulk it up. Served with rice. Thanks for sharing! - 3/3/10
