Ingredients

    2 cups of uncooked Quinoa
    1/4 cup of shallots
    one cup fresh diced mushrooms
    1/3 cup of diced(very small) Catrrots
    one 2.5 cups can of chicken broth
    1/2 cup water
    season with herbs

Directions

Saute the shallots, mushrooms and carrots until mushroom looses juice. Mix in Quinoa siring often to brown for about 5 min add in water and chicken broth until boiling reduce heat cover and cook for about 20 min.

Serving Size: makes about 5 cups
