Ingredients

2 tbsp olive oil
1/4 cup diced red onion
1/4 cup diced white onion
2 stalks of Green Onion, sliced into 1/4 to 1/8"
1 jalapeno, finely chopped, seeds removed
2 ripe mangos, diced.
2 Tbsp fresh shoppoed cilantro
2 Tbsp fresh mint
3 tbsp lime juice
2 medium tomatoes, finely diced
4-6 Garlic Cloves (large), Minced
Tips
Allowing complated Salsa to chill will add a great mix of hot/cold to fish or chicken.
Directions
1. Chop all vegetables, keep Tomatoes/mango separate
2. Add Olive Oil to a nonstick cook pan, preheat.
3. Add all vegetables except the tomatos and mango, sauteee until onions are translucent (cooked).
4. Remove from heat and place sauteed vegetables in medium sized mixing bowl. Allow to Cool (10-15m). Mix in tomatoes, mango, herbs, lime Juice.
5. Refrigerate or serve over baked fish.
