Introduction

This falafel dough is spread thinly (1/2" - 3/4") and baked like a large cookie in the oven. It is very versatile and can be used as a crust for canapes, sliced up for sandwiches or salads or even as a crust for pizza with interesting toppings like feta cheese, daiya, olives, roasted red peppers etc. This falafel dough is spread thinly (1/2" - 3/4") and baked like a large cookie in the oven. Ingredients

    1 can chickpeas, drained and rinsed
    1 onion
    3 or 4 Tbsp finely chopped fresh cilantro
    1/2 tsp salt
    1/2 tsp red pepper flakes
    3 or 4 cloves of garlic
    1 teaspoon cumin
    1 teaspoon baking powder
    4-6 tablespoons spelt flour
    1 Tbsp olive oil

Directions

Preheat oven to 350F. Place the chickpeas, onion, cilantro, spices, salt, and garlic in the bowl of a food processor, fitted with a steel blade. Process until blended, then add the baking powder and 4 tablespoons of the flour and pulse. Add remaining flour if necessary. The dough should be cookie-batter consistency. Use 1/2 of the olive oil to grease a cookie sheet or pizza pan and spread the batter to 1/2" to 3/4" thickness. Drizzle the remaining oil over the top and spread it around with your fingers a bit. Bake for 40 minutes or until golden and firm.
