Ingredients

    4 skinless boneless Chicken breast
    4 sweet potatoes - raw, peel, slice and cubed
    1 onion - chopped
    2 cans of black beans, drained and rinsed
    3 cloves garlic, chopped
    3 teaspoons adobo chili powder (this is a low heat mild flavorful chili power
    4 tsps dried cilantro
    4 teaspoons ground cumin * (not listed above as powder not in database

Tips

you can pan fry the chicken for a few minutes rather than grilling - I just like the grilled flavor with this


Directions

season chicken breast with chili and garlic powder to taste, grill for about 3 or 4 minutes each side. Remove from grill and place in bottom of crock pot. layer sweet potatoes, chopped onions and black beans on top. Mix garlic, cumin, salsa, cilantro and chicken broth together, pour over top of chicken, sweet potatoes and beans. Cook for 4 to 6 hours in the crock pot. About half way thru stir. Delicious. Makes 8 servings
