Ingredients

    1 med. spaghetti squash
    1/2 cup chopped onion
    1 large pepper, chopped
    1 cup shredded cheese
    1 cup cottage cheese
    1 large tomato, sliced
    3 cups (one 1/2 pound container) sliced mushrooms
    1 Tbsp. unsalted butter
    1 Tbsp. flour
    1 tsp. oregano
    1/4 tsp. basil
    1 tsp. garlic salt

Tips

Add any other vegetables that you have on hand that need to be used up (cucumber, spinach, carrots, etc.)


Directions

Bake squash on a baking sheet at 350 degrees for 1 hour. Cut in half lengthwise and remove seeds. Melt butter and mix with flour. Add oregano, basil, and garlic salt. Mix all together and place in greased dishes (2 13X9 inch cake pans). Bake at 350 degrees for 30 minutes.

Serving Size: Makes about 6 servings (can feed more, but calories are calculated for 6 people)
