Introduction

Ingredients

    3 slices of bacon, chopped
    2 cloves garlic, minced
    2 cups sliced mushrooms
    1 cup vegetable broth
    4 cups cooked brown rice spaghetti
    3 T chopped cilantro
    Fresh ground black pepper, to taste

Directions

In large frying pan, fry the chopped bacon over medium high heat until cooked through. Reduce heat to medium, add the garlic and mushrooms and cook till soft. Add the vegetable broth and spaghetti, reduce heat to medium low and simmer for 5 minutes or until heated through. Top with chopped cilantro and fresh ground pepper to taste and serve.

Serving Size: Makes 4 servings for salads
