Number of Servings: 4


    2 chicken breasts (approx. 1 lb)
    1 medium zucchini
    1 8oz container mushrooms
    8 oz whole wheat rotini or penne rigate
    0.5 cup water
    0.5 cup sour cream, reduced fat
    1 packet onion soup mix
    1 tbsp garlic, minced


Cut chicken strips into small slices. Cut zucchini into small pieces and slice the mushrooms. Mix sour cream, water and onion soup mix.
Spray a non-stick skillet with cooking spray and brown the chicken. Add garlic and vegetables and cook until zucchini is tender. Pour the sauce over the chicken and vegetables, bring to a boil then turn heat to low (or even better, turn burner off to save energy).
Cook pasta according to package directions, drain.
Once chicken/vegetable sauce is done, remove from oven and mix with pasta. Serve.

Makes 4 2-cup servings.
