Ingredients

    1 sandwich thin (I use Kroger)
    2 slices Lightlife veggie turk'y
    2 tbsp fat-free feta cheese (Athenos)
    1 tbsp low-fat marinara sauce
    1 artichoke heart, in water, diced
    1-2 slices of tomato, fresh or sun dried ** I think sun dried tomatos really add a lot of flavor here
    dash greek seasoning (I use The Spice Hunter, salt and msg-free_

Directions

Assemble sandwich this way: Place turkey on one slice of the sandwich thin, spread marinara on top, sprinkle on feta, diced artichoke, and diced sun-dried/sliced fresh tomato. Sprinkle on seasoning. Then top with other bread slice.
Preheat a small skillet to medium heat. Spray the bottom of the sandwich with butter spray and place in heated skillet. Spray upward-facing side with butter spray as well. Press down; after about 1 1/2 minutes, flip and continue to cook on second side until brown and crispy.

Serving Size: makes 1 sandwich
