Ingredients
-
Add:
Ice (could not find this as a selection above when
adding ingredients)
Coconut Milk
Coconut Meat from a fresh cut coconut
(and add the coconut water inside as well)
Pineapple
bag of TJ's Berry Medley
Tips
Tip #1: ice can be omitted if the coconut and
pineapple were refrigerated and the berry medley pack is still frozen.
Tip #2: I did not add anything to sweeten it any further but you may. If so I would recommend Agave Nectar since it's natural and comes in light and amber flavors.
Directions
****Be sure you are using a very very good blender because fresh adult coconut meat is very very hard****
Add the ingredients in the following order:
- ice
- 1 cup coconut milk
- coconut meat and water from one fresh whole
coconut (medium)
- Pineapple
- bag of frozen Berry Medley from Trader Joe's
Blend all ingredients on low and slowly increase the speed to medium, medium-high, then high. If you have a Vitamix as I do, you will need to use your plunger for this. Blend for approximately 1 minute (not too long as the Vitamix can begin to heat as if you are making a soup recipe).
Turn off the blender, add the last 1 cup of TJ's coconut milk and blend as stated above using your plunger.
Blend for another 30 seconds to 1 minute and you are done.
Serving Size: Makes a full 1/2 Gallon Beverage (6 - 8 oz glasses)
Number of Servings: 8
