Introduction

Ingredients

4-10 Sweet Potatoes, sliced (making round circles) and then cubed OR cut like length wise to make fries. Slices should be consistant in width.
1-2 tbsp olive oil to lightly coat for roasting
1 packet onion soup mix (per 4-6 sweet potatoes)
1/4 tsp blue agave sweetener, barely drizzeled and mixed well
[Optional for zest:
mix in seperate bowl: 1/2 tsp cumin, 1/2 tsp ground corriander, 1/2 tsp oregano, 1 tbsp parsley, 1/2 tsp kosher salt, 10 turns fresh ground black pepper

Tips
Spray pans that are not non-stick. I haven't had any issues, but this will help making scooping easist.
Directions
Slice sweet potatoes in consistant width, cubed.
Add olive oil to lightly coat potatoes
Add soup mix and stir to coat evenly
Spread mix over baking sheets, not overlapping potatoes.
Sprinkle zest if desired.
Bake at 425 and check after 20 minutes. Depending on thickness. Look for a browning, evenly on potatoes.
Serving Size: Each medium sweet potatoe renders roughly 1 cup cubed, about 1 serving
