A healthy and very low calorie addition for your favourite soup, broth, stew or curry! Just under 50 calories per little cake! A healthy and very low calorie addition for your favourite soup, broth, stew or curry! Just under 50 calories per little cake!Ingredients
-
2 cups of ground DRY (in a food processor preferably) oats (I used instant "quick 1-minute oats)
1 egg
2/3 cup (I used Vanilla) soymilk
4 Zero-calorie sweetener packets (if desired. This gives the cake a slightly sweeter edge, you could totally use a bit of salt in place of this as well)
Non-stick cooking/baking spray (0-calories, and super easy to clean up)
And Just a tad bit of flour for your hands, seeing as the dough can be sticky.
Tips
** Creative additives/toppings that keep the calorie count down, but the flavor up:
1. Shredded low-fat cheddar cheese (NOT VEGAN FRIENDLY) - You can top your cakes with this before entering them into the oven, or mix it right in with the dry ingredients ahead of time.
2. A bit of butter (I can't believe it's not butter or low-fat/calorie) - You can melt about two tablespoons in the mircowave and paint on just a bit to your 'cakes' before they go in and after for a nice golden glow and savory flavor!
* Cakes will be dense! This is where the 'Stone' in their name comes from, but they have a unique texture that goes great for dipping/soaking in soup, and sort of acts like a (very) low-calorie substitute for small bread-rolls.
* Stone cakes will come out somewhat small, and do not rise much! However, placing them in your soups/broths a few minutes ahead of time not only makes them softer, but lets them fill up/absorb the flavor of your meal - making them more filling!
Directions
(2.) Do the same for the dry (Oatmeal sugar/salt)
(3.) Slowly pour in the liquid mixture to the dry, mixing/folding in the oatmeal/sugar/salt mixture as you go along. The mixture may clump, this is natural. Simply continue mixing and if the mixture seems a little dry for your tastes, feel free to add a bit more of soymilk in to your liking.
(4.) After dough is thoroughly combined (It will be sticky! Not to worry, though! Just use a bit of flour on your hands if you're not afraid to get a little dirty.) divide dough into ten small balls and place on a sprayed/Pam-ed cookie sheet.
(5.) Preheat your oven to 350 degrees and bake for about 20 minutes.
Serving Size: Recipe makes TEN small ball-shaped servings roughly divided.
