Number of Servings: 6

Ingredients

    12 oz lentils, canned or home cooked
    1 cup shredded carrots
    1 cup pineapple, minced (canned tidbits work well)
    1/4 cup raisins
    curry powder to taste
    salt and pepper to taste
    chili powder to taste


Tips

The original recipe does not call for pineapple but the first time I made it I used leftover carrot slaw with pineapple. This can be a bit dry, add a bit of liquid if desired.


Directions

If cooking lentils from dried, cook them according to the directions.

Combine ingredients in a medium sized pan and heat through. Adjust the seasonings to your taste.

Heat two 6" corn tortillas per serving

Fill tortillas with lentil mixture, add lettuce and sour cream if desired (torillas, sour cream and other additions not included in calorie count).

Serving Size: 6 1/2 cup servings
