Introduction

This vegan chili is delicious. Everyone in the family, including my carnivorous husband, loves it. This vegan chili is delicious. Everyone in the family, including my carnivorous husband, loves it.

Ingredients

    1/2 6 oz. can Tomato Paste
    3 cups frozen Yellow Corn
    4 cloves Garlic, minced
    5 tbsp Chili Powder
    4 tsp Ground Cumin
    1 tbsp Olive Oil
    1 cup chopped Green Bell Pepper
    1 cup chopped Yellow Onion
    6 cans Red Kidney Beans, drained and rinsed
    2 cans Tomatoes, diced and with juice

Directions

Sautee garlic and onion in olive oil until onions become translucent.
Add all other ingredients, bring to a boil, cover, and simmer for at least 30 minutes.
This recipe is very flexible; you can adjust the ingredients and seasonings to your family's taste.
I would say a serving size would probably be one cup?
