    1/4 c rolled oats
    2 tbsp fiber bran cereal
    1/3 c unsweetened almond milk (or water)
    1 tsp cinnamon
    1/4 tsp nutmeg
    1/4 tsp almond extract
    dash of salt
    1/2 c grated zucchini (about 1/2 of a medium baby squash)
    1 tbsp vanilla sun warrior protein powder
    1 walnut half, broken into tinier pieces


Preheat oven to 375.
Grate your zucchini.
Grease a mini baking pan i.e. mini loaf pan with nonstick spray.
Combine all ingredients (including sweetener to taste!) in a bowl, and then pour into baking dish. Press pieces of walnuts into batter. Bake for 20-22 minutes or until browned and firm; then broil for an additional 3.
