Number of Servings: 6

Ingredients

    2 cans Great Northern Beans--drained and rinsed.
    1 pint Grape Tomatoes -- halved
    1 10oz package Baby Spinach (fresh)
    1/2 cup finely chopped Red Onion
    3 cloves Garlic (fresh)
    1 1oz package Basil (fresh)
    1 tbsp Lemon Juice
    1 tbsp Olive Oil

Tips

To avoid mushy beans do not over heat/cook the beans. Also great left over.


Directions

Drain and rinse beans; warm on low heat in a non-stick skillet with non-stick cooking spray.

Half grape tomatoes add to beans.

In a food processor or chopper add three cloves of garlic, fresh basil leaves, olive oil and lemon juice. Blend until pesto consistency. Add to beans and tomatoes.

Turn heat to medium add spinach two handfuls at a time; covering to wilt with each addition.

Remove from heat immediately.

Serving Size: Makes 6 1 cup servings
