Introduction

This is a simple lunch light dinner recipe using bonless and skinless chicken thighs (you can do the same with whole thighs but its better without the skin).

Ingredients

    Ingredients:

    Tesco Chicken Thigh Fillets, 486 gram(s)
    Odlums Cream Plain Flour, 75 gram(s) (or more if needed)
    Sesame Seeds, 4 tbs
    Egg, fresh, 1 large
    Pepper, black, 1 tsp
    Cumin seed, 2 tsp (roasted)
    Paprika, 1 tsp
    Ground tumeric, 0.5 tsp
    Sea Salt, 1 tsp
    Pepper, white, 0.5 tsp

Tips

Serve with a salad and sweet potato wedges or with nice bread.
Is great with mayonaise with a little garlic or lemon added.


Directions

Beat the egg and place in a shallow dish, heat a frying pan (mediumk heat) and lightly roast the cumin seeds (until you can smell the spice and they are slightly darker brown), grind the cumin with the sea salt, black pepper, white pepper tumeric and paprika in a pestle and mortar.
Mix the spice mix and the sesame seeds with the flour. Dip the chicken thigh in the egg and then coat in the flour shaking off any excess. Place on a baking sheet and bake in an oven at 170 for 30 mins (sometimes less, when the chicken is browned its done).
