Ingredients

2c zucchini
2c yellow squash
1/2 c onion
1 block extra firm tofu
1/2 c green pepper
1/2 c red pepper
2.5 tbs coconut oil
4 tsp Mae Ploy yellow curry paste
3 cup cooked brown rice
Directions
cook tofu with coconut oil til slightly brown
throw in zucchini and squash and onion til slightly soft
throw in peppers and curry paste, stir and cook for a bit
pour in coconut milk and let simmer for 5 minutes
serve over rice, and enjoy!
Serving Size: makes 2.5 large helpings or 4-5 regular sized helpings
