Ingredients

    1/4 cup chopped walnuts
    8 oz chicken breast, skinless, cut into small strips or cubes
    1/4 cup crumbled Roquefort (blue) cheese
    4 tablespoons blue cheese dressing
    1/3 cup fresh cherries, pitted and diced
    1/4 cup finely chopped celery
    1/2 cup firmly packed arugula
    4 cups of fresh spinach


Tips

Salt and pepper to taste. To make healthier, reduce amount of dressing or apply at end rather than toss with salad.


Directions

Preheat Oven to 350 degrees.

Spread walnuts on a baking sheet, baking until aromatic and shiny (about 10 minutes). Remove and allow to cool.

Heat large nonstick skillet over high heat (add cooking spray or oil if necessary to prevent sticking). Cook chicken until cooked through (about 3-5 minutes) stirring occasionally. Let cool, if you prefer.

Mix together cheese, dressing, cherries, and celery. Add chicken, then toss with spinach.

Divide and enjoy!
