Ingredients

Step One (saute together)
~1 med. yellow onion, diced
~2 tsp minced garlic or 3-4 cloves
~1 diced bell pepper
Step Two (crumble & stir in)
~1 box (16 oz) extra firm silken tofu
Step Three (add & saute)
~1 C spinach leaves
~1/2 tsp turneric
~1/2 tsp paprika
~1 tsp cumin
~2 Tbsp nutritional yeast
~Salt & pepper to taste
Tips
VARIATIONS:
Mexican style - add salsa and black beans, serve with avocado and nondairy sour cream or plain yogurt
Breakfast Burrito - wrap in whole wheat tortilla, serve with tortilla chips, avocado, salsa, and non-dairy sour cream or plain yogurt
Italian style - Add basil, oregano, rosemary, parsley, tomatoes and Kalamata olives
Directions
Saute onion, garlic, pepper (& mushrooms, optional) on medium high for 5 minutes or until onion starts to brown
Crumble tofu into pan and stir
Add all other ingredients and saute 5-8 minutes until tofu is bright yellow and hot throughout. Salt and pepper to taste
