Introduction

Ingredients

3 cups almond meal/flour
1/4 teaspoon salt
1 1/2 teaspoon baking soda
2 tablespoons coconut oil (melted)
4 large eggs
2 cups mashed bananas
1 cup blueberries (frozen or fresh)
Tips
This is just like the website recipe, only I replaced the butter with coconut oil. Also, I just put everything, except the blueberries,into a Kitchen Aid, and let it mix, bananas and all. Then, I fold in the blueberries.
Directions
Preheat oven to 350 degrees. Butter a 12 cup muffin tray.
In a large bowl, combine the almond meal, salt and baking soda. In a medium bowl, whisk together the eggs and melted, coconut oil. Stir
the bananas into the batter, mix to incorporate then fold in the blueberries. Spoon the batter in to the muffin cups. Bake for 30 to 40 minutes, until the muffins are golden brown and spring back to the touch.
Serving Size: Makes 12 muffins
