Ingredients

    Italian tomato sauce, 2 cups
    Beef broth, 2 cups
    Diced tomatoes, 1 small can
    Zuchinni, 1 medium
    Yellow squash, 1 medium
    Red or green pepper, 1 medium
    Brown rice, 1 cup dry
    Water, 2 cups

Tips

This may make more than 8 1-cup servings depending on the size of the vegetables.


Directions

In large saucepan, bring tomato sauce, beef broth and diced tomatoes, zuchinni, yellow squash and pepper to a boil. Add water as needed to cover the ingredients. Reduce heat, cover and simmer for 15 minutes. Add brown rice, cover and cook for an additional 15 minutes.
