Ingredients

    3 Tbsp. Olive Oil
    3 tsp Minced Garlic
    1 lb. Ground beef, extra lean
    1/2 lb. Carrots, pureed
    1 tsp. Better than Bouillon beef flavored base
    1 29-oz Petite, Diced, Canned Tomatoes
    1 29-oz Crushed, Canned Tomatoes
    1 8-oz can Mushrooms, canned
    2 tbsp Basil
    1 tsp. Black Pepper (or to taste)
    Water
    1 6-oz can tomato paste
    2 lb. Spaghetti, cooked

Tips

Tastes even better made one or two days ahead, so the flavors blend.


Directions

Heat olive oil in a heavy 12" pan or pot, saute garlic briefly, add ground beef, breaking up frequently while browning. Meanwhile, using a food processor or fine grater, finely chop or puree carrots, adding water if desired. When ground beef is lightly browned, add carrots and beef bouillon. Stir and heat for about 2 minutes. Add mushrooms, canned tomatoes, basil, pepper and a bay leaf, if desired. Add water as needed to make a thick, sauce. Simmer on low about 20-30 minutes, stirring occasionally. Add tomato paste, sir and add water if desired to make sauce thicker or thinner to taste.

Serve over hot cooked pasta.
