Ingredients

    1Tbsp Flour
    3-4 Tbsp Olive Oil
    6 Cups Chicken or beef broth (can use vegitable too)
    1/2 lb Ground Italian sausage (chicken, turkey, pork - doesn't matter)
    3 links Italian Sausage (chicken, turkey, pork - doesn't matter)
    1 small yellow union - chopped
    1 small pepper - chopped
    1 12 oz can sliced okra - drained
    2 tbsp MCormick Perfect Pinch Cajun Seasoning
    Salt & Pepper to taste

    Rice of your choice

Tips

I tend to go with as much Turkey as possible...it isn't always, but it tends to be less greasy.

I also cheat and grab a 2 C container of mixed, sliced peppers and chop them all up.

The other short cut I've found is after cooking the sausage and making the roux, I put everything in a crock pot all at once and walk away...it's ready in about 4 hours on high or 6 on medium.


Directions

Cook ground sausage in a Dutch oven over medium heat, stirring constantly, 5 minutes or until browned. Drain on paper towels, reserving drippings in Dutch oven. Set sausage aside.

Cook Sausage links, chop into bite sized pieces & set aside.

Add enough oil to drippings in Dutch oven to measure 1/2 cup. Add flour, and cook over medium heat, stirring constantly, 20 to 25 minutes, or until roux is chocolate colored.
Stir in onion & peppers, cook, stirring often until tender. Gradually add broth, and bring mixture to a boil; add garlic, okra and cajun seasoning. Reduce heat to low, and simmer, stirring occasionally, 1 hour. Add sausage to gumbo; cook 30 minutes.

Cook rice per instructions and place in a bowl. Add gumbo to top of rice & enjoy.

Serving Size: Makes a good size bowl
