Ingredients

    1.5 cups quinoa
    2 bell pepers
    1 lb chicken breast cooked and cubed
    1 large tomato
    1 english cucumber
    1 large avocado
    1/2 cup greek salad dressing with feta cheese

Tips

This is best made a few hours ahead so that flavours can meld.


Directions

cook quinoa (3 cups water to 1.5 cups quinoa, boil water then add quinoa and drop to a simmer and place lid on pot, simmer for about 15 mins until all water is absorbed and quinoa is cooked)

Dice all veggies and chicken

Rinse quinoa in cold water until cold

Mix all ingredients together in a bowl
