Ingredients

    6 Boneless Pork Loin Chops, fat removed, approx 6 oz each (thick cut)

    2 C Panko Bread Crumbs
    1/2 tsp Adobo Seasoning (or salt)
    1/4 tsp each Ground Sage, Pepper, and Coriander
    1 T. Dried Rosemary

    1 sm. Onion, chopped
    1/2 Green Pepper, chopped
    1 sm. Carrot, chopped
    1 C.-ish chopped Mushrooms
    1 T. Butter or Olive Oil
    1 Egg
    1 C. Low sodium/fat Beef Broth

Tips

Since a meat serving is technically 3 oz, this makes about 12 servings.


Directions

Lay chops in 9x13. Combine Bread Crumbs and seasonings in bowl, mix, set aside.

In small saute pan, add veg and butter. cook on Med-high heat until veg is soft. Add broth and remove from heat.

Beat egg and add to bread crumbs, then add veg and broth. Stir thoroughly.

Top Chops with stuffing and cook on 350 for approx 30 minutes on until chops are cooked through.

Serving Size: makes 12 servings
