    1.5 cups brown rice, uncooked
    1 can black beans
    1 can corn, or 1.5 cups frozen corn
    3 tomatoes
    1 bell pepper
    cilantro, about 1/2-3/4 of a bunch

    3T lime juice
    3T balsamic vinegar
    1T cumin
    dash of salt
    dash of pepper
    sugar to taste (optional)


Cook rice according to package directions. Chop tomatoes, bell pepper and cilantro. Combine rice, beans, corn, pepper, tomato and cilantro in serving bowl. Dissolve cumin in lime juice, then add balsamic vinegar, salt, pepper and sugar if desired. Pour dressing over salad and mix well. Serve either hot or cold. Makes 10 1-cup servings.
