Introduction

I make this as a quick lunch for a large crowd.It has alot of sodium. But it beats the sandwiches and chips or pizza option. I make this as a quick lunch for a large crowd.It has alot of sodium. But it beats the sandwiches and chips or pizza option.
Number of Servings: 27

Ingredients

    2 cups chopped onions
    2 tsp Garlic
    2 cups chicken broth ( you can use any broth this is just what I had on hand)
    2 lbs of Fresh Spinach (with the harder stems removed)
    2 packge of Artichokes
    1 can Hunts Pasta Sauce (our favorite is Zesty and Spicy) use your favorite flavor
    2 cans diced tomatoes (we use fire roasted with garlic) use your favorite flavor.


Tips

I find it does not need any salt or seasoning because of the canned sauce and tomatoes So wait until done to add any salt


Directions

saute the onions and garlic in a large pot until translucent.
add the chicken broth and deglaze the pan
add the spinach leaves
once the spinach leaves have cooked (less than 5 minutes)
add the rest of the ingrediants
season to taste

Serving Size: makes 25 1 cup servings
