Introduction

Ingredients

    500g potatoes (about a lb)
    2 eggs
    150g flour (about 1 cup) + extra set aside for kneading
    a few pinches of salt not too much
    1 pinch nutmeg

Directions

Boil and peel potatoes. Press potatoes through a ricer. Kneed into a dough with remaining ingredients. Bring a salted pot of water to a rolling boil. Flour your surface well. Roll dough into long finger thick strips, squeeze into palm so they have tips on both ends. Drop into boiling water for about 5 minutes until they float. Serve any way you like them. Traditionally they are fried with bacon and sauerkraut. But you can also serve 1/2 a serving with a low fat stew to make it healthier. The recipe is calculated for 4 svg but could easily be 8.
