Ingredients

3 medium Sweet Potatoes
1/4 cup Olive Oil
Salt and Pepper to taste
Cayenne Pepper to taste
Crushed Red Pepper, a dash
Directions
1. Heat the oven to 400*.
2. Skin the sweet potatoes.
3. Cut them in half, and then slice them.
4. In a large bowl, mix the sweet potatoes with the olive oil, salt, pepper, and cayenne pepper. (If you want it spicier, add more cayenne pepper. Less, if you don't want it as spicy.)
5. Place them on a foil covered pan; I used a broiling pan.
6. Bake them at 400* for 10 minutes.
7. Switch to broil, and cook for 5 minutes or until crispy on the edges.
8. Bake at 400* for another 5 minutes.
9. Add a sprinkling of crushed red pepper.
10. Bake another 2 minutes or so until done.
Makes 3 servings.
Goes excellent with the Salsa Turkey Burgers.
