Introduction

Ingredients

3/4 cup quinoa, rinsed
4 cups water
1/2 tsp salt
1 cup milk
2 TBSP cornstarch
1/4 cup chopped onion
1/4 cup chopped celery
1 TBSP olive oil
1 package frozen broccoli florets, cooked or 2 cups cooked fresh broccoli
1/2 tsp salt
6 slices American cheese or 1/4 cup processed cheese, diced
1/2 tsp black pepper
Tips
You could make this with canned cream of celery soup if desired.
Directions
Cook quinoa 20 minutes until done, drain. Sautee veggies in oil until soft; add milk mixed with cornstarch and boullion cubes and stir over medium heat until mixture starts to thicken and boullion cubes dissolve and incorporate, remove from heat. Add cooked quinoa, broccoli and cheese and stir until cheese melts and all is mixed together, serve.
