Number of Servings: 6

Ingredients

    3 cups cooked brown rice
    1 lb. 93% lean ground beef
    1 (15oz.) can chopped tomatoes, no salt added, drained
    1 medium onion, chopped
    1 cup shredded non-fat cheddar cheese
    3 cups shredded cabbage
    3/4 cup non fat sour cream
    Vegetable oil cooking spray
    salt and pepper to taste

Directions

Spray a frying pan with vegetable oil spray and brown the beef with onion. Drain grease. Put cabbage in boiling water until done, but not overdone. Mix tomatoes and sour cream in hamburger mixture. Layer rice on bottom of 2 1/2 quart casserole. Next add drained cabbage. Next add hamburger mixture. Put cheese on top. Cook at 350 degrees F. until cheese melts. Makes six servings.

    I didn't care much for this recipe. If I make it again it will need some serious tweaking. Maybe Mexican-tomatoes, less sour cream, and more cabbage, Couldn't even taste the cabbage. - 3/1/08
