Number of Servings: 6

Ingredients

    * Lentils (1lb dry, uncooked), 2 cup
    * Water, tap, 8 cup
    * Onions, raw, 1 cup, chopped
    * Mixed Vegetables, canned, 2 cup
    * Tomato Paste, 0.5 cup
    * Salt, 1 tsp
    * Curry powder, .5 tsp
    * *BacOs Bacon Bits, 3 tbsp
    * *Canola Oil, 2 1tsp

Directions

Saute onions with oil in a big pot that has a lid.
Rinse lentils in colander and pick over if necessary.
When onions are golden add all the other ingredients including liquid from canned veggies.
Simmer over very low heat, stirring occasionally, cover if you want the soup to be more liquid (you may need to add water if you simmer uncovered).
This can simmer for up to two hours if you want.
I didn't have chopped frozen spinach or kale, but it would be a very nice addition!
