Ingredients

3 large egg whites
1/2 egg yolk
4 large cooked, defrosted shrimp, chopped
1/4 cup green onions, finely chopped
1 cup triple washed baby spinach, coarsely chopped
1/2 tbsp. Parmesan cheese
1/4 tsp. garlic powder
1/2 tbsp. extra virgin olive oil
1/2 a pat of butter
1/4 cup pickled jalapenos or pickled jalapenos and carrot mix
Tips
I don't recommend nonstick spray for this recipe as it tends to cause the omelet to stick, but you can still do it as long as you're okay with a scramble! I also like to add a bit of egg yolk to the egg white since it makes a better, fluffier omelet, but without the calories. Try experimenting with different amounts of egg yolk, but I have found that 1/2 of an egg yolk with 3 egg whites works great.
Directions
Preheat small frying pan at medium-high heat.
Coarsely chop large cooked shrimp, spinach, pickled jalapenos, and green onion. Separate egg whites from yolk, but save 1/2 of an egg yolk. Beat until frothy.
Add olive oil and a smidgen of butter to the pan. Immediately add chopped ingredients. Stir to mix and add egg. Reduce heat to medium and sprinkle Parmesan cheese. Cover and cook for 3 minutes or until egg is fluffy and no longer runny.
Carefully flip over and fold in half. Serve immediately and enjoy!!
