Ingredients

    80 g. grape tomato, halved
    80 g. English cucumber, 1/4 inch dice
    50 g. Vidalia onion, diced
    100 g. smoked kippered herring, bone and skin removed
    1 Tbs. Rocket Fuel Salsa

Directions

Simmer Herring in water for 30 minutes. Remove bones and skin and flake into small bowl. Add cucumber, tomatoes. salsa and onion. Serve over boiled white yam
