Introduction

Number of Servings: 8

Ingredients

    6 cups diced potatoes
    1 cup diced celery
    1 cup diced onions
    1 tsp butter
    1.5 cups of 1% milk
    2 cups of swanson chicken broth 99% fat free
    1 tsp salt
    2 tsp black pepper
    1 cup of colby/cheddar shredded low fat cheese

Tips

you can add parsley or rosemary, use any cheese that you love to eat


Directions

Place tsp of butter in a large kettle or dutch oven turn on med-high heat and add celery and onions. Let that cook for about five minutes. Next combine your potatoes, milk, chicken broth, salt and pepper. Cook on medium heat stirring occasionally, cook for about 20 minutes. If potatoes are fork soft then use a serving spoon and mash 3/4 of potatoes just to give the soup some texture. Finish off the soup with the cup of cheese and simmer on low for about five minutes.
