Ingredients

    Cooking spray, to coat soup pan
    1 small onion, minced
    16 oz broccoli
    3 1/2 cp Chicken Broth
    4 oz Velveeta, light cheese product, cubed
    1/2 cp skim milk
    1/2 tsp garlic powder
    1/2 cp water
    1/4 cp cornstarch
    1/2 tsp black pepper
    1/4 tsp white pepper

Tips

If you want to lighten this recipe even more simply replace the regular Velveeta with the light Velveeta. It reduces the amounts to 103.4 calories per serving, 2.6 fat, 14.2 carbs, 7.5 protein


Directions

Spray a large saucepan with cooking spray and saute onion over meduim-high heat until onion becomes soft, about 3 minutes. Add the broccoli & broth and bring to a boil. Reduce heat to medium and cook until broccoli is tender, about 3 more minutes. Reduce heat to low and add cubed cheese stiring until melted followed by milk, garlic powder, black pepper & white pepper.

In a separate bowl whisk water and cornstarch and add to pan and stir. continue cooking until soup starts to thicken (about 2 minutes).

Serving Size: Recipe yields approximately six, 1 cup servings

  • Incredible!
    This is delicious! My one big concern is the amount of sodium in this recipe. Iím not sure how to reduce that without taking away from the yummy flavor. Next time, I think Iím going to make it with unsalted bone broth. That will reduce the sodium and add to the protein. - 10/1/19
