This is a vegan friendly salad, loaded with fiber and minerals AND most importantly, super skinny but healthy addition to your diet. It uses absolutely NO oil, cheese or any chemicals like vinegar! Ingredients


    Arugula, 2 cups
    1 Apple, Gala (small), thinly sliced
    Walnuts, a handful, roughly ground
    Pistacios, a handful, roughly ground
    Lime Juice, 1 tbsp
    Honey, 1 tbsp
    Dates, 0.5 cup, pitted, chopped
    Freshly ground pepper - per taste

Tips

Here are some variations that can give it a nice twist to the salad:

1) You could substitute lime with orange juice. You could even add some orange zest for a kick.

2) Apples can be swapped with crispy crunchy asian pears.

3) You could even add some boiled/steamed beats, diced or cubed.


Directions

In a large salad bowl, add lime juice, honey and pepper. Whisk them together until they blend well. Add the greens, dates and apples and give them a good mix. Then add walnut-pistacio mixture to the greens and mix them all again.
