Number of Servings: 6

Ingredients

    6 medium potatoes (about 2 lbs) peeled and thinly sliced.
    1 cup low sodium fat free chicken broth
    1 Tbsp melted butter
    1 large clove of garlic, minced
    1/4 tsp salt
    1/4 tsp black pepper
    1/3 C fresh grated Parmesan
    1 Tbsp chopped fresh Parsley

Tips

You may have to cover for part of the baking to prevent the top from over browning.


Directions

Preheat oven to 375.
Spray 2.5 L (11 X 9) casserole dish with cooking spray.
1) Layer potatoes in dish.
2) Combine broth, butter, garlic, salt, and Pepper. Pour over potatoes.
3) Bake 50 to 60 minutes until potatoes are tender and top is golden brown.
